8 sheets phyllo dough
1/4 cup butter or margarine, melted
5 tablespoons grated Parmesan cheese
2 ½ tablespoons finely chopped green onion
1/2 teaspoon salt
1/4 teaspoon pepper
Fold each phyllo dough sheet into fourths, brushing butter between each fold. Place the layered phyllo sheets in eight greased muffin cups. Sprinkle 2 teaspoons of cheese into each cup. Top with one egg. Sprinkle with green onion, salt and pepper. Bake on a baking sheet at 350 degrees for 25-30 minutes or until eggs are completely set and pastry is golden brown.
