Ingredients:
1 cup sticky rice
1 ripe mango, cut into bite-size pieces
4 tablespoons brown sugar
1/4 teaspoon salt
1 can coconut milk
Directions:
Soak the rice in 1 cup water for 30 minutes. Do not drain. Add 3/4 cup water, 1/4 can coconut milk, 1/4 teaspoon salt and 1 tablespoon brown sugar and bring to a boil. Reduce heat to medium-low and simmer, partially covered with a lid, for 20 minutes until the coconut milk and water is absorbed. Turn off the heat, cover tightly and let sit on burner for 5-10 minutes. Heat remaining coconut milk on medium-low for 5 minutes. Add 3 tablespoons sugar, stirring to dissolve. Reduce heat to low and stir rice mixture into coconut milk. Add mango pieces and stir for 1-2 minutes until warm.
