Ingredients:
¾ c. butter, chopped
1 c. pack brown sugar
½ c. chopped pecans
5 lbs sweet potatoes, peeled and cut into 1 ½-inch pieces
3 Tbsp. maple syrup
4 eggs
1 Tbsp. lemon juice
2 tsp. salt
2 Tbsp. vanilla extract
Directions:
Mix butter, sugar and pecans. Boil sweet potatoes in salted water 12 min (until very tender). Drain, let cool, and puree. Beat syrup, eggs, lemon juice, salt and vanilla, and add to sweet potatoes. Spread in greased 9×13 dish, top with pecan mixture. Bake at 350 degrees for 1 hour.
