As with any room, you'll need to consider what level of light control and privacy you'll need.  You'll also want a window treatment that offers ventilation and that can stand up to the heat of your appliances.  If your windows are near a sink or preparation area, you probably need a blind that is easy to clean.

In addition to being easy to clean, window treatments over sinks and counters should not have dangling cords.  Shades with cordless lift are a great choice to avoid a cluttered look and to keep cords out of the disposal.  Faux wood blinds are a good choice because they will not warp or peel from the heat and moisture; many styles coordinate with wood blinds so you can match blinds in the rest of your home.  Fabric shades on the other hand can provide vivid color choices.
